Chocolate Covered Mallow Cookies

Yesterday I shared with ya'll my tasting of Enjoy Life's Crunchy Cookies.

I ate a lot of them cookies. I did share some too.

But then, I still had about two and half full boxes of cookies, collectively.

What is a girl to do with all these cookies?

Dip 'um in chocolate of course!!

To make these Chocolate covered, marshmallow topped, crunchy cookie treat, you start with three ingredients.

Enjoy Life's crunchy cookies, Enjoy Life's Chocolate chunks {melted}, and homemade marshmallow fluff.

Lay cookies out on parchment paper, in two equal rows.

Top all the cookies in one row with the marshmallow fluff.

Now, you can do one of three things.

Dip the un-marshmallowed cookie in chocolate, and place on top of the marshmallow cookie, than dip the entire cookie sandwich in chocolate. This makes a marshmallow cookie sandwich, with a little chocolate in the middle.

Th second option, is to do make the same cookie sandwich, but without pre-dipping one cookie half.

The last option, involves only the one marshmallow topped cookie. All you have to do is top the cookie {with the marshmallow already on it} with a dollop of the melted chocolate, and smear the chocolate until it covers entire cookie.

Put in the fridge until hardened. 

Eat a couple. 

Store the rest in fridge until you can eat some more!
