Gluten Free Coconut Chicken Curry with Brown Rice

I think you've heard enough jibber-jabber out of my the last few days, so without further a-do;
 Coconut Chicken Curry

1 Tbsp Olive Oil
1/2 Cup onion (diced)
2 cloves Garlic (minced)
11/4 tsp ground Ginger 
4 Chicken breasts, cut into pieces
1 Tbsp Curry Powder
1/2 tsp coriander
1/2 tsp salt
1/4 tsp pepper
1 cup chicken broth
2 cups brown rice
1 cup peas
1/2 cup So-delicious Coconut yogurt, plain flavor
1/4 cup chives (minced)

-Heat oil in a large skillet over med-high heat. Add onion, garlic and ginger and saute for 2 minutes. Add chicken, saute 3 minutes until golden on all sides.
-Add curry, coriander, salt and pepper to pan and stir to coat chicken. Add chicken broth, and bring to a boil. Reduce heat to low and simmer for 10 mins until chicken is cooked through.
-cook brown rice according to directions, and add green peas to rice halfway through.
-Remove chicken mixture from heat, and stir in yogurt and chives.
-Serve with chicken mixture over rice.
