12 Treats of Christmas: Russian Tea Cookies {#2}


This next treat in carinabeans 12 treats of Christmas, is a cookie that I can recall from Christmas' long ago...




In other words, these cookies were a recurring guest on my mothers holiday cookie plate every year.



I have to tell you folks, these cookies; you absolutely can't tell they are gluten/dairy/corn free.
In fact, the words that came from my first taste testers mouth after trying, were "wow, these taste just like the real deal!"


They are delicious.



They have many different names, 
Russian Tea cookies
Mexican Wedding cakes
or 
Snowball cookies


These are so easy to make, I didn't even have to whip out the Kitchenaid.
Seriously took only like five minutes to make this batter.
The only hard part was having to wait for them to chill.
Which they did all night.

*a little secret about gluten free treats...they always work better after being chilled!


Heres the recipe:

Russian Tea Cookies

1 cup softened dairy free butter
1/2 cup corn free Powdered Sugar (I use Trader Joes}
1 tsp vanilla
2 1/2 cups King Arthur Gluten Free Flour Blend
1/4 tsp salt
3/4 cup finely chopped Pecans
additional powdered sugar (for rolling)

-Mix together butter, sugar, and vanilla.
-Sift together flour and salt. Stir in to butter mix.
-Mix in nuts.
-Chill overnight

-Preheat oven to 400degrees
-Roll into 1in balls and place on un-greased cookie sheet.
-Bake for 10-12 minutes. (until set, but not browned)
-While warm, roll in powdered sugar.
-Cool, and roll in powdered sugar again.
