When not working, or cooking or watching way to much foodnetwork channel, you can usually find me scouring the internet or my many cookbooks, looking for new delicious ideas. One Sunday afternoon, I came across this. These cupcakes immediately filled my every thought. So I sped over to Trader Joes for some lemon curd and got to work.
I subsituted Pamelas baking and pancake mix for the flour, and as much as I love Pamela; they didn't taste as well as I hoped they would. I think Bobs Red Mill all-purpose flour may have worked better....
No matter, any piece of cake filled with lemon curd and slathered with meringue frosting is an amazing dessert.(it also really impressed everyone at work:)
