Hello blog readers!

My name is Carina, and I have Celiac disease.

I became gluten free in 2009, after years of health struggles and various diagnosis. Since going gluten free, I have been on a mission to find, create and eat delicious gluten free food. I like to prove to all those people who feel sorry for me and my restricted diet, that food can be beautiful, delicious and healthy. Who wants to eat a lousy takeout burrito, when you could eat a freshly shredded beef taco?

In addition to being GF, I now also avoid dairy, soy, corn and I try really hard to not eat sugar, but ya know how that goes.

Along with being a Celiac, I also suffer from Postural Orthostatic Tachycardia Syndrome, Polycystic Ovarian Syndrome, and Hypothyroidism.
I am kind of a mess. But I love me anyway.

Speaking of burritos, I am completely obsessed with Chipotle burrito bowls. I could eat one topped with guacamole and pico every day of my life, for every meal.
I am also morbidly addicted to potatoes. Potato chips, mashed, baked, red, yellow, new-doesn't matter, I love them all.
and Pesto. I love pesto more than the air I breath.

I started this blog, at the prompting of family members to share my allergy friendly food creations. As a young child, I was dubbed carina-beana which is where the original name of this blog came from. You can read about that here. It is now Carina M. Creations, because thats my name, and I create stuff.

In addition to food finds and recipes, my beagle/dog Penelope "the Pennster" Sue is a frequent visitor, and I like to take a lot of pictures of myself, and other things too. I live in a beautiful California town, which has been dubbed by thee Oprah as the happiest place on earth, where I go on adventures of the non-edible variety (and the edible too). I also have the best job on the planet, which is being an aunt to several little whipper snappers, who occasionally make some fun visits over here at creations.

I have worked in the medical field for a few years where, in addition to my own life experiences, have gained quite the medical knowledge. But even though I have very strong thoughts and opinions, they are just that; and in no way should be considered medical advice. Using said info to talk to your own doctor would be a pretty bomb-diggity thing to do though, so go for it.

P.S. Someday I will get around to writing a proper introduction to all that is me, but for now writing a whole deal about myself doesn't seem like a good time. I would much rather talk about what I'm eating for dinner.
